Gluten Free, Lo Carb Asparagus & Swiss Quiche

Ingredients:
1/4 cup of water
1 sweet onion, chopped
1 cup cleaned, grilled or blanched asparagus
4 whole eggs, 4 egg whites
sea salt & pepper
2 ounces of Swiss cheese


Procedure:
Preheat oven to 350 degrees. Heat 1/4 cup water in pan and add chopped onions. Cook for 5 - 8 minutes until soft. Add more water if they start to stick. As onions are cooking grill or blanch asparagus. Cool, then cut asparagus in 1-2 inch pieces. In a medium bowl add eggs and seasonings and whisk. Add onions, asparagus and cheese. Spray pie dish with cooking spray. Add egg mixture to dish and cook in oven for 25- 30 minutes. Enjoy.
